Dumplings are back! Thursday 26 September

Vanessa Miles, the Australian cook, photographer and teacher known as ‘the hungry chook’, is back at latteria studio for the fourth year in a row.  In this hands on class Vanessa will have you rolling and filling delicious pork and mushroom dumplings, and share the tricks to grilling them ‘potsticker’ style. This is a simple evening class which finishes with dinner around latteria studio’s long table, with seasonal Asian vegetable dishes and wine.

learn to bake SOURDOUGH bread with Jeremy Cherfas – Sunday June 9

Join master baker and sourdough nut Jeremy Cherfas for an all day baking workshop.

Along with taking participants through the basics of baking bread with a natural ‘mother’ yeast, everyone in this all day class will take home a piece of starter with which to continue their sourdough journey.  And not just any starter!  Jeremy has a much loved Tuscan starter – that he has fed and baked with for over ten years – that is over a hundred years old.  Is there anything particulary Tuscan about it?  Perhaps not, but it is ready to make delicious, flavorful and nutritious bread.

Jeremy will pass on the knowledge surrounding keeping, and using your new (old) starter to make sourdough bread of various types.  There will be a fresh summer lunch with wine and detailed notes to take home along with the starter.

A Turin inspired lunch with Emiko Davies – Thursday 30 May

Emiko Davies brings her warmth and love for heirloom recipes and regional Italian class to Rome for a day class and lunch from her latest cookbook Tortellini at Midnight.

There will be coffee and a hazelnut cake from Piedmonte to start the day, followed by rolling and kneading, mixing and pinching to make Walnut Grissini to crunch on with home made Vermouth, classic Agnellotti al plin, a tachhino tonnato and more.

An evening with Carla Tomasi and Vicky Bennison from Pasta Grannies, Friday 31 May

Friday 31 May, from 7.30 pm

Meet the face behind the incredible Pasta Grannies project – that has taken the YouTube world by storm – that documents, granny by granny, traditional pasta recipes from all over Italy.  Vicky will be talking about her many and varied journeys all over the country to record family recipes and the secrets of the nonne, while Carla keeps everyone fed with a fresh made pasta meal, local wine and other treats.

Christmas classics for homemade gifts and festive treats. Old favourites from the anglo tradition: mince pies, gingerbread, classic shortbread as well as lesser known Italiann gems cavalluci di siena.

Join in around the spice filled kitchen table as we roll and cut favourites for the holiday season.  We’ll pack our treats in inventive waste free packaging, and enjoy an antipasto style dinner with wine as we work.

Cost of the class is 55 euro, to be paid as a deposit of 25 with the balance of 30 euro on the night. Follow the links to book for the 13th of december and the 20th of december.  Everyone will take home what they have prepared for the Christmas pantry.

Goatober Rome – Goat tasting evening with James Whetlor from Cabrito, Saturday 13 October

Goatober spreads the word that goat meat is delicious, ethical and sustainable. The hope is to move goat meat into the mainstream with the goal that all billy goats born into the dairy system, anywhere in the world, will go into the food system, rather than being wasted.

Goatober arrived in the UK in 2016 and mainland Europe in the following year. There are vibrant dairy industries across the UK and Europe who want to change the practice of euthanising and Goatober is part of the solution. The campaign aims to put a goat dish on restaurant menus and to encourage people to try cooking goat at home themselves, for all or part of October.

James Whetlor, the founder of Cabrito, will be cooking and presenting his vision of the future of goat meat.

In October 2018, there are Goatober events and dinners in London, Bristol, Manchester, Cornwall and at a global food symposium in Galway, Ireland. Working in partnership with the Interreg ‘food heroes’project, which aims to end food waste in farming across the EU, there are events at the Nantes food Festival in France and in Frankfurt, The Netherlands, Rome and at the Amorevore Food & Arts Festival in Ibiza.
