The culinary arts of Persia are as flavourful as they are beautiful; saffron and spices, pomegranates and roses, mint and more come together at the Persian table.  Saghar Setareh, cook, blogger and photographer leads a day class with lunch featuring the flavours of her homeland and including; Adas-polo, Persian rice with lentils and caramelized onions, Persian Jewelled rice with pistachios, almonds, oranges zest, Saffron chicken and a Pomegranate mint salad.  To finish a Persian love cake and tea.

The world of fresh pasta with Carla Tomasi – Saturday 7 October

Spend a day with Carla Tomasi in the world of fresh pasta.  She will share the secrets, techniques and recipes in this all day class which will cover making fresh pasta in various forms; tagliatelle, seasonal ravioli, garganelli and more.  The class includes (a pasta based) lunch with wine and lots of fresh goodness from Carla’s garden in Ostia Antica.  You will leave with some of the pasta you have made and a recipe compendium.

Preserve the Season with Carla Tomasi, Sunday 17th September

Sunday 17 September, from 10 am.

A day of bottling, pickling and fermenting the glorious end of summer produce with Carla Tomasi. We will bottle tomato and basil sauce, pickle zucchini with oregano and mint, make spiced peaches, quick pickles, plum chutney and more.

Tuscany comes to Rome: Giulia Scarpaleggia from Juls’ Kitchen, Wednesday 20 September

A day of cooking from Mercati in Toscana in Rome, Wednesday 20 Sep from 10am

Giulia is a Tuscan born and bred food writer and photographer and she teaches Tuscan cooking classes in her studio in the countryside in between Siena and Florence.

Join us for a cooking class completely dedicated to La Cucina dei Mercati in Toscana, Giulia and Tommaso’s last cookbook which explores the best Tuscan food markets and their most typical recipes.

We have chosen a menu which perfectly represents the area we are from, with recipes from Chianti, Val d’Orcia and Siena. We will cook a quick and versatile appetizer made of stale bread and pecorino, with an unexpected ingredient, white wine.

We will hand roll pici, thick home-made spaghetti from the Val d’Orcia, and dress them with a rich sausage sauce. We will cook vegetables as the Italian do, until they surrender in a delicious green bean stew. Latte alla portoghese, with a hint of saffron, will close the meal with a sweet ending.

 

 Wines from a local farm will accompany our meal and our chats over a table of shared honest food.  This is a hands on all day class with a maximum of 8 participants, if you want to book your spot send an email to info@julskitchen.com

Tuscany comes to Rome: cooking from Acquacotta with Emiko Davies, Saturday September 16

Florence based Emiko Davies is back at latteria studio for an all day class on Saturday September 16.  She’ll be cooking from her latest cookbook Acquacotta: Recipes and Stories from Tuscany’s Secret Silver Coast and has chosen a menu perfect for the season where Summer turns into Autumn, where the air is cooler and the produce is bountiful.

Learn the stories and secrets behind favourite recipes from the rugged countryside and coastline of southern Tuscany’s Maremma including hand-rolled pasta, a fisherman’s “acquacotta” soup with whole prawns, mussels and clams, a refreshing salad from Giglio island and a very seasonal pear and ricotta tart.

 

We’ll set a beautiful table for lunch using lots of the ceramics that were used for the book’s photos, that were taken by Lauren Bamford with styling by Deb Kaloper and came from Latteria Studio.  Lunch will be served with wine from the Maremma area.

Plates and Props Studio Sale – Tuesday July 4

Join Anna Laura from Dishes Only and Alice Adams for a summer evening, aperitivo style studio sale.  Anna Laura will be bringing beautiful pieces from her collection of Italian and international ceramics houses.  I will have doubles and extras from the shelves of the studio, some rustic, some classic Italian, some sixties pop.

From 4 pm to 9pm.  Via di Ponziano 29, Trastevere.  Please let us know that you are coming so we can have jugs of cool iced tea and other refreshments ready.

Join Tuscan based, Australian food writer, photographer and storyteller Emiko Davies for a Maremman cooking class and four course lunch inspired by her latest cookbook, Acquacotta: Recipes and Stories from Tuscany’s Secret Silver Coast.  Learn the stories and secrets behind her favourite recipes from the rugged countryside and coastline of southern Tuscany’s Maremma including hand-rolled pasta, a fisherman’s “acquacotta” coup with whole prawns, mussels and clams, a refreshing salad from Giglio island and fragrant melon granita.

We’ll set a beautiful table for lunch using lots of the ceramics that were used for the book’s photos, that were taken by Lauren Bamford with styling by Deb Kaloper and came from Latteria Studio.  Lunch will be served with wine from the Maremma area.

This is a hands on all day class with a maximum of 8 participants.  Cost is 100 euro per person, (roughly 140 AUD), and you can click here to book.
