Vanessa Miles, the Australian cook, photographer and teacher known as ‘the hungry chook’, is back at latteria studio for the fourth year in a row. In this hands on class Vanessa will have you rolling and filling delicious pork and mushroom dumplings, and share the tricks to grilling them ‘potsticker’ style. This is a simple evening class which finishes with dinner around latteria studio’s long table, with seasonal Asian vegetable dishes and wine.

The best of summer, direct from Carla’s vegetable garden in Ostia Antica, will be on work benches at latteria studio on Friday 19 July and Wednesday 31 July. There will be flat beans and french beans, sweetcorn, zucchini, blossoms and all, tomatoes and fresh herbs, cucumbers, eggplants and fragrant stone fruits. Both days will be a bounty of wonderful produce and classic summery preparations. There will be a lovely long lunch with local wine to finish the class.

Join master baker and sourdough nut Jeremy Cherfas for an all day baking workshop.
Along with taking participants through the basics of baking bread with a natural ‘mother’ yeast, everyone in this all day class will take home a piece of starter with which to continue their sourdough journey. And not just any starter! Jeremy has a much loved Tuscan starter – that he has fed and baked with for over ten years – that is over a hundred years old. Is there anything particulary Tuscan about it? Perhaps not, but it is ready to make delicious, flavorful and nutritious bread.
Jeremy will pass on the knowledge surrounding keeping, and using your new (old) starter to make sourdough bread of various types. There will be a fresh summer lunch with wine and detailed notes to take home along with the starter.

Market to Table is a special series of appointments created by Rachel Roddy, Carla Tomasi and Alice Adams for visitors to Rome. The idea is to start at the market, mostly Testaccio, Rachel’s local, where we fill bags and baskets with the best of the season. We then walk back across the river to Trastevere and up to the latteria studio kitchen where Carla (or Alice) awaits – with more produce from her garden in Ostia.

Emiko Davies brings her warmth and love for heirloom recipes and regional Italian class to Rome for a day class and lunch from her latest cookbook Tortellini at Midnight.
There will be coffee and a hazelnut cake from Piedmonte to start the day, followed by rolling and kneading, mixing and pinching to make Walnut Grissini to crunch on with home made Vermouth, classic Agnellotti al plin, a tachhino tonnato and more.

A relaxing jaunt through Testaccio with Marco Gargiulo, hitting the highlights of this historic neighborhood from the Pyramid to the old slaughterhouse and the local food market.
Crossing the river to Trastevere, with a brief walk you will reach Latteria Studio where Carla Tomasi will greet you with wine and homemade focaccia.
A pasta lesson will follow and then a delicious lunch of handmade pasta, Carla’s garden vegetables and pudding.

Lisbeth and Thomas from Il Ghiottone Umbro ran their first Roman food weekend workshop this April at latteria studio. From the look of their produce table as they unloaded their produce from the market (Testaccio on friday and Circo Massimo on Saturday), and the taste of some of the dishes I dipped my fork into, this is one of the best 2 day cooking workshops going. Lisbeth, a Danish chef, and Thomas, run a boutique bed and breakfast in Todi. Their next workshop here in Rome will celebrate Autumn and runs between 10 and 13 October. As well as market visits and classes there will be dinners at favourite Roman restaurants and time for a few aperitivi and sights.
